Another week gone. Not gunna lie, this was one of those weeks where the weekend could not come fast enough! You know those weekends where you're so busy you need a weekend to recover from the weekend? Well, that was our weekend last weekend, and we were all T.I.R.E.D. come Friday morning! Anywho... here are our weeks highlights worth mentioning!
Meal of the Week... Cauliflower Nachos!
This is one of our absolute FAVORITE meals. Well, mine and my husbands, our kids won't touch it #pickeyeaters. Its super easy to make and healthy too so a win all around. Here's the recipe:
One head of cauliflower, broken into bite size pieces.
One pound of your choice of meat. We typically use ground beef or venison, you could use ground turkey or shredded chicken as well.
Shredded Cheddar Cheese
Preheat oven to 425. Coat your cauliflower in cooking oil and season well with taco seasoning. Place on cookie sheet in a single layer and cook for 25 - 35 mintues until tender. Brown your meat and season with taco seasoning. Once cauliflower is done cooking dump the taco meat on top and sprinkle with however much shredded cheese your heart desires. Put back into the oven for approximately 5 minutes or until cheese is melted. Top with with whatever topping you want and enjoy!
I am a brace face once again... just in time for our mask mandate to be lifted. And I say once again because this is my THIRD time having braces, second time as an adult. I won't go into all the details but this last year I started feeling really self-conscious about my out of place front tooth, so I finally decided to do something about it. And yes, I could have done Invisalign or something similar but that would have taken closer to a year and this route is only 6-9 months. So here's to feeling like Drew Barrymore in Never Been Kissed for a while and kids wear your retainer!
Something I'm currently Loving
This year I decided I wanted to introduce a devotional to my daily journaling. I'm currently on day 51 of 100 Days of Believing Bigger by Marshawn Evans Daniels and so far it has been so good for helping me conquer self doubt and fear, and start following my heart. I highly recommend it!
Speaking of journaling, have you ever kept a gratitude journal? This is something I started doing awhile ago that I feel truly makes a difference in your life. All you have to do is take a few minutes each day to write down three things you're thankful for. They don't have to be major life events. They can be as simple as your morning coffee or the 25 cents per gallon you saved at the gas pump (cause we could all use that right about now!). After awhile your brain will start to automatically focus on the good and your perspective will change.

Health & Wellness
I'm almost done with my second week of intermittent fasting and have realized a couple of things. First, counting calories is NOT for me. It wasn't a big deal when I was eating something prepackaged or a single ingredient item, but I don't want to take the time to calculate the calories of meals. It's just too much for my already scattered mom brain. Second, intermittent fasting is not as mentally difficult as I thought it was going to be. I thought that I was going to be starving during my fasting time. Turns out that's not the case. Don't get me wrong I was HUNGRY by the time my fasting period was over, but I wasn't walking around thinking about food 24/7!
All that being said, I am going to be putting my fasting on hold for a little while because Beachbody is launching a new nutrition program this week that I will be doing!! You can follow along as I do the 4 Week Gut Protocol on my instagram!
