Weekly Wrap-Up 3.19.22

My Highlight of the Week:

Easton had his half birthday on the 16th! It really hit me this week with how much he's grown. My little snuggly newborn is officially gone. He seems to have finally gotten past the 4 month sleep regression (knock on wood). But that's also come with the development of the witching hour, or hours in his case. The poor kid looks like a hot mess with all of his dark hair slowly falling out and his new hair growing back in blonde. He's still a little chatter box and still laughs at everything. It blows my mind how engaging he is. He's perfect little babe!



Meal of the Week:

Mexican Cauliflower Rice Bowl. This meal was low carb, fairly easy to make, and husband approved (our kids did not try this. Yes I am one of those parents who will cook two meals, I pick my battles). This was one of those meals I ended up winging so I don't have an exact recipe for you, but next time I make it I will for sure share all the details. In the mean time here are the ingredients used:

  • 1lb Ground Beef

  • Riced Cauliflower

  • 1 Can Pinto Beans, Drained

  • 1/2 Onion

  • Minced Garlic

  • Cilantro

  • Taco Seasoning

  • Shredded Cheddar Cheese

Something I am Loving this Week:

So one of my insta obsessions is watching cleaning reels. My favorite account to follow is Now it's Clean. She seriously motivates me to clean my house and I'm not at all upset about it. One thing she promotes is a tub and shower scrubber. I finally got around to getting one and it will forever be in my cleaning lineup! No more sore back leaning over the tub or wet feet from having to get in the shower to clean the walls! Run fast and get yourself one. You won't regret it!


Holy Vegetables!

That is all I have to say about my new nutrition program for the next 4 weeks! Started doing my meal plan and I will be eating SEVEN servings of vegetables throughout the day... SEVEN! I can't wait to share more with you as I go through it! T-minus 3 days until I get started!
